Cuisinart’s 7″ Santoku knife is tops. I have a number of high quality knives, but this is one of my favorites for several reasons:
1. It has a lovely feel: heavy, well-balanced, and just the right size for my small hand.
2. It keeps a super sharp edge and requires just a slight touch up now and then.
3. It’s just the right size for most basic tasks related to prepping vegetables and fruits.
